Spanakorizo (Spinach Rice) is a traditional Greek recipe for a dish of rice into which fresh spinach has been stirred. The full recipe is presented here and I hope you enjoy this classic Greek version of Spanakorizo.

This is a classic Greek dish for flavoured rice with spinach.
Ingredients:
120ml olive oil
2 medium onions, coarsely chopped
1 red chilli, finely chopped
350g long grain rice
600ml water (or stock)
300g fresh spinach, chopped
100g fresh dill, chopped
230ml yoghurt
salt to taste
Method:
In a deep saucepan heat the oil over a medium heat and add the onions until translucent (about 4 minutes) then add the chilli and the rice. Stir to coat with the oil.
Meanwhile, heat water or stock in a saucepan add the spinach and when it begins to boil immediately pour over the rice. Stir well, season with salt, bring to the boil and cover. Reduce to a simmer and cook for 20 minutes until the rice is just tender.
Serve immediately, sprinkled with dill, and accompanied by a generous dollop of yoghurt on each plate.
