Spaghetti with Duck Egg Carbonara: Spaghetti in a duck egg, cream, bacon and parmesan cheese sauce.

Ingredients:

225g spaghetti
150g smoked bacon lardons (or smoked streaky bacon sliced into thin strips)
2 duck eggs
1 duck egg yolk
2 tbsp olive oil
4 tbsp finely-grated Pecorino Romano cheese
4 tbsp double cream
freshly-ground black pepper, to taste
shavings of Pecorino Romano cheese to garnish

Method:

Cook the pasta by boiling in lightly-salted water until just al dente (about 15 minutes to 20 minutes). Meanwhile add the oil to a pan and use to fry the smoked bacon lardons until crisp and golden.

Whisk together the duck eggs and duck egg yolk, grated cheese and cream in a bowl and season liberally with black pepper. When the pasta is ready drain in a colander (do not drain completely) then return to the saucepan and add the smoked bacon (along with any cooking oil) then tip in the duck egg and cream mixture.

Stir everything together so that the pasta gets an even coating of the egg and cream mixture (the heat from the pasta will cook the eggs) then serve in deep pasta bowls and garnish with shavings of the Pecorino Cheese.
