Soy Chicken Wings a Classic Chinese recipe for a dish of chicken wings boiled in water flavoured with spices, sugar and soy sauce.

Ingredients:

250g chicken wings
250ml water
1 tbsp spring onions, sliced
3cm piece of ginger, cut into 4 slices
2 tbsp light soy sauce
1/2 tsp dark soy sauce
1 star anise
1 tsp sugar

Method:

Wash the chicken wings and pat dry. Bring the water to a boil in a small pan, add the chicken along with the spring onion and the ginger and bring back to a boil.

Add the remaining ingredients, cover and simmer for 30 minutes.

At this point, remove the chicken wings and drain off any remaining liquid. Serve hot.
