It's not just in Britain where ginger biscuits (cookies) are loved. You will find them (or versions of them) all through sub-Saharan Africa. This particular variant comes from South Africa.

Ingredients:

650g plain flour
2 tbsp ground ginger
1 tbsp bicarbonate of soda
2 1/2 tsp cream of tartar
450g demerara sugar
115g margarine, diced
115g lard, diced
125ml golden syrup (light corn syrup)
3 extra-large eggs (large if you are in the UK)

Method:

Sift together the dry ingredients in a bowl then add the margarine and lard and rub into the flour mix with your fingertips until the mixture resembles fine crumbs.

Warm the syrup until runny, allow to cool slightly then stir into the other ingredients. Finally add the eggs and work into the flour mix until the ingredients come together to form a dough.

Turn the dough onto a floured work surface and knead until smooth. Divide into heaped tablespoon portions then roll these into balls. Sit on a greased baking tray and press flat with the tines of a fork.

Transfer to an oven pre-heated to 200°C and bake for about 6 minutes, or until nicely browned and cooked through.

Allow to cool on the baking tray for 5 minutes then carefully transfer to a wire rack to cool completely before storing or serving.
