Souphet (Thai Maitake Salad) is a traditional Thai recipe for a classic salad made with maitake (hen of the woods) fungus with mint, chillies, coriander leaves and ground rice. The full recipe is presented here and I hope you enjoy this classic Thai version of: Thai Maitake Salad (Souphet).

Ingredients:
400g Maitake (Hen of the Woods) mushrooms, cut into strips about 6mm by 3.5cm
35g fresh mint leaves, chopped
35g fresh coriander (cilantro) leaves, chopped
2 spring onions, chopped
juice of 1/2 lime
1/2 tsp crushed chilli flakes
1 tsp rice dry fried until browned then ground to a powder
3/4 tbsp Nam Pla (Thai fish sauce)
1 tbsp sugar
pinch of salt
1 tbsp groundnut oil, for frying
Method:
Whisk together the lime juice, sugar and fish sauce together in a bowl and set aside.
Add the groundnut oil to a frying pan or wok and use to fry the mushrooms over medium heat until they release their liquid and this liquid has evaporated. Add the lime juice mix at this point and stir to combine.
When all the liquid has been absorbed and the pan is dry add the ground rice, crushed chillies, salt and spring onions. Mix to combine then turn into a serving bowl.
