Sos Nasi Trafasie (Suriname Stir-fry Sauce)

This is an adaptation of the Surinamese stir-fry sauce that's the flavour base of many stir fries and meat marinades.

Ingredients:

3 garlic cloves, crushed
2 tsp lemon grass powder
4 tbsp kecap manis; sweet soy sauce
2 tsp ginger, finely chopped
1 tsp kencur (sand ginger) powder (optional)
2 tsp galangal, finely chopped
salt to taste
1 tbsp hot chilli powder
6 tbsp dark soy sauce
2 bouillon cubes, crumbled
2 tsp brown sugar
1 1/2 tsp salt
1 tsp ground allspice
gravy browning (burnt caramel), to colour
water, as needed

Method:

Combine the garlic, lemongrass powder, ginger, sand ginger powder, galangal, chilli powder, bouillon cube, brown sugar, salt and allspice in a food processor. Pulse to chop then add enough water so you can render to a thick paste.

Stir in the kecap manis and soy sauce then add enough of the burnt caramel (gravy browning)to give a black sauce. Transfer to a clean jar and store in the refrigerator.
