Sonhos de Banana (Banana Dreams) is a traditional Sao Tomean recipe for a classic dessert of mashed bananas made into a batter with flour, sugar, milk and egg that's then deep fried to cook and served dusted with cinnamon sugar. Ingredients:
220g peeled bananas
25g sugar
120g plain flour
100ml milk
1 egg
cinnamon sugar, for dusting
oil for deep frying
Method:
Thoroughly mash the bananas with a fork, then mix in the sugar and the flour. Beat together the milk and egg then work this into the banana mix to form a batter.
Heat oil in a deep fan or deep fat fryer to 180°C. Drop the batter into the hot oil by the tablespoon and fry for about 5 minutes, turning over half way through, until nicely browned and cooked through.
Drain on kitchen paper and serve dusted with cinnamon sugar.
