Smoky Fish Skewers a Classic British recipe for a barbecue dish of marinated smoked and fresh cod with prawns and bayleaves cooked on a barbecue.
Ingredients:
350ml smoked cod fillet
350g cod fillet
8 large raw prawns
8 bayleaves
fresh dill, to garnish
For the Marinade:
4 tbsp sunflower oil
2 tbsp lemon juice (or lime juice)
finely-grated zest of 1/2 lemon (or 1/2 lime)
1/2 tsp dried dill
salt and freshly-ground black pepper, to taste
Method:
Skin the cod then cut the flesh into bite-sized pieces. Peel the prawns, but leave the tails attached.
For the marinade, mix together the sunflower oil, citrus juice and citrus zest in a shallow non-reactive dish. Whisk in the dried dill and season to taste.
Place the fish pieces in the marinade an stir until well coated all over. Cover and set side to marinate in the refrigerator for at least two hours.
After this time thread the fish onto 4 skewers, alternating the two types of cod with the prawns and the bayleaves.
Cover the rack of your barbecue with kitchen foil and place the fish skewers on top of the foil.
Barbecue the fish skewers over hot coals for about 8 minutes, basting frequently with any left-over marinade and turning once.
Garnish with fresh dill (chopped) and serve.
