Smoked Salmon and Cream Cheese Pâté is a modern British recipe for a classic starter of a pate made from a blend of smoked salmon, cream cheese and double cream that makes an excellent Christmas starter. Ingredients:
200g smoked salmon
100g cream cheese
25ml double cream
1 tbsp lemon juice
salt and freshly-ground black pepper, to taste
1 tbsp capers, coarsely chopped
snipped chives, to garnish
Method:
Combine the salmon, cream cheese, cream, lemon juice and seasonings in a food processor. Blend until smooth then turn into a bowl and fold in the capers.
Scrape the mixture into a serving bowl and smooth over the top. Sprinkle over the snipped chives and chill in the refrigerator for at least 1 hour before serving.
