This is an American take on a curry, which first struck me as slightly odd. However, the use of fruit in curries is fairly common (it ameliorates the heat) and if chicken is commonly used, why not pork? This does end up much sweeter than suits my palate and I would probably add tamarind juice or lime juice to acidulate if I was preparing for myself. But. here, I'm presenting the recipe as I first saw it.

Ingredients:

1kg boneless pork loin roast, cut into 1-inch cubes
1 medium apple, peeled and chopped
1 small onion, chopped
125ml (1/2 cup) orange juice
1 tablespoon curry powder
1 teaspoon chicken bouillon granules
1 garlic clove, minced
1/2 tsp salt
1/2 tsp ground ginger
1/4 tsp ground cinnamon
2 tbsp cornflour (cornstarch)
2 tbsp cold water

Hot cooked rice, to serve (optional)
50g raisins
25g sweetened shredded coconut, toasted

Method:

Combine the pork, apple, onion, orange juice, curry powder, chicken bouillon granules, garlic clove, salt, ginger and cinnamon in a 3l slow cooker. Cover and cook on low for 5-6 hours or until the meat is tender.

Increase the heat to high. Meanwhile, beat together the cornflour and water in a small bowl to a smooth slurry. Stir this into the slow cooker then cover and cook for 30 minutes or until thickened, stirring half way through.

Garnish with raisins and coconut and serve accompanied by rice.
