Fried Fish Roe

Though the recipe says 'fish' roe, what's actually cooked here are the fish ovaries. These may contain roe (mature eggs) or they may not. The male testes are usually sold along with the ovaries as 'roe' too. Roe is one of the best sources of omega-3 fatty acids.

Ingredients:

8 Fish Roe Fish (typically roe of Palla (Hilsa))
1 tsp ground Turmeric
Salt to taste
Oil for shallow frying
1 batch green seasoning

Method:

In a bowl, season the ovaries with salt and turmeric. Set aside for a few minutes then add the green seasoning, turning the roe (ovaries) to coat then set aside to marinate for at least 30 minutes.

Heat oil in a shallow pan. When the oil is hot, carefully place the fish green seasoning coated roe in the pan.
Dab the leftover marinade on the roe and let the fish eggs fry on a medium flame for 5 to 6 minutes.

At this point, gently flip over the fish eggs and allow them to fry for another 5 to 6 minutes or until done.

Take care while handling the fish eggs as they tend to break easily. The best way is to slide a spatula underneath and then carefully flip over.

Serve fish roe (fish ovaries) as a starter or as a side-dish along with the main course. They can also be served as a breakfast dish with sliced tomato and sliced avocado.
