Ingredients:

500g ripe breadfruit
1 onion, diced
2 garlic cloves, minced
1 red bell pepper, diced
100g cheese, grated
1 tsp ground cumin
1 tsp paprika
2 tbsp vegetable oil
Salt and freshly-ground black pepper, to taste
1 savoury shortcrust pastry case (optional)

Method:

When purchasing ingredients for this breadfruit pie, it is important to choose ripe breadfruit. Ripe breadfruit has a greenish-yellow colour and should give slightly when squeezed. Visit local markets or ethnic stores to find fresh, high-quality ingredients. It's also worth buying spices in bulk to bring out the full flavour in your breadfruit pie.

To prepare the ingredients in advance. First, peel the breadfruit and cut it into small pieces so it cooks evenly. Dice the onions, garlic, and peppers as well. This preparation ensures that every bite is full of flavour and the flavours blend well.

Bring the breadfruit to a boil in a pan of water and simmer for about 15 minutes until tender. Drain the cooked breadfruit and mash it with a fork or potato masher.

Heat the oil in a pan and sauté the onions, garlic, and bell pepper until softened. Add the crushed breadfruit and mix well, along with the spices, salt, and pepper to taste.

Transfer to a baking dish, sprinkle with grated cheese, and bake in a preheated oven at 180°C for about 20 minutes until the dish is piping hot and the cheese is bubbling.
