St Kitts Stewed Fish

Method:

Rinse the fish, drain carefully then pat dry with paper towels or a clean towel and rub all over with a halved lemon or lime.

Place fish in a large bowl then season with salt, garlic, ginger, thyme, white pepper and green seasoning. Rub the mixture all over the fish pieces until well coated then set aside in the refrigerator to marinate for at least 30 minutes (but best over-night).

When ready to cook remove fish from the refrigerator, then lightly shake off any excess marinade.

Place a large heavy-based frying pan over medium heat. When hot, add a little oil and use to fry the fish for about 2-3 minutes on each side until the meat is lightly crisped. Remove the fish with tongs and set aside. Drain away the excess oil, leaving behind only about 3 tbsp.

Add the onion, scotch bonnet chilli, garlic, green seasoning, thyme, bay leaf, frying for about 4 minutes, until onions are tender. Stir frequently to avoid the ingredients from burning.

Add tomatoes and continue stirring until it comes to a simmer then add about 125ml stock or water. Continue cooking for about 5 minutes.

Finally add the bell pepper, spring onions and bouillon seasoning (if using. At this point return the fish to the pan and pour in about 125ml more stock or water. Simmer for about 5 minutes or more.

Adjust for seasonings and thickness of stew with stock or oil. Remove from the heat and serve with rice or fried plantains or any accompaniment of your choice.
