Ingredients:

3 plantains cut into halves
2 tbsp grated ginger
1 small onion, grated
¼ tsp salt
¼ tsp hot chilli, finely chopped
vegetable oil for frying

Method:

Combine all ingredients in a bowl. Toss until mixed.

Heat oil in a wok or deep frying pan over medium heat then fry in batches until golden brown and cooked through.

Remove with a slotted spoon, drain on kitchen towels and serve.
