Johnny cakes are a Caribbean favourite, and in Saint Kitts and Nevis, they’re often enjoyed for breakfast or as a side dish.
Ingredients:
250g flour
100g sugar
1 tsp baking powder
1/2 tsp salt
125m milk
50g butter, melted and cooed
Oil for frying
Method:
Mix together the flour, sugar, baking powder, and salt in a bowl.
Add the milk and melted butter, mixing to form a dough. Shape into small rounds and fry in hot oil until golden brown.
