This is quite a different jerk seasoning from that found on other Caribbean Islands as it's based largely on turmeric, has no hot pepper and uses ground achiote to give a red colour on cooking.

Ingredients:

3 tbsp ground turmeric
3 tbsp onion powder
3 tbsp dried thyme
3 tbsp ground allspice
3 tbsp cracked black pepper
2 tbsp golden caster sugar
2 tbsp garlic powder
1 1/2 tbsp sea salt
1 tbsp ground ginger
1 tbsp ground cinnamon
1 tbsp ground nutmeg
1 tbsp paprika
1 tbsp dried marjoram
1 tbsp dried sage
1 tbsp dried rosemary
2 tsp ground annatto seeds

Method:

In a large bowl, whisk together the onion powder, thyme, allspice, black pepper, golden caster sugar, garlic powder, sea salt, ginger, cinnamon, nutmeg, turmeric, annatto, paprika, marjoram, sage, and rosemary until well combined.

Store the finished seasoning in a sealed glass jar to maintain its intense aroma and freshness.
