Nevis Jerk Marinade

Ingredients:

2 tbsp olive oil
1 Onion, finely diced
½ cup spring onions, finely diced
2 garlic coves, minced
2 tsps freshly Thyme, minced
1 tsp Sea Salt
2 tsps sugar
1 tsp ground Allspice
½ tsp freshly-grated nutmeg
1 Scotch Bonnet or Habanero chilli, finely minced
1 tsp freshly-ground black pepper
2 tbsp dark Soy sauce
1 tbsp freshly squeezed lime juice

Method:

Combine all the ingredients in a large bowl. Mix thoroughly to combine.

If not using immediately store in a jar in the refrigerator where it will keep for a couple of days.
