Sugar Cake is a popular sweet treat in Kittitian and Nevisian cuisine. This delightful confection combines the rich flavours of coconut and caramelized sugar with vanilla and almond flavouring, resulting in a deliciously sweet and chewy dessert. It is often enjoyed during festive occasions, such as Christmas or Easter, but is available year round.

Ingredients:

150g grated coconut
200g granulated sugar
125ml water
red food colouring (optional)
1/4 tsp vanilla extract
1/4 teaspoon almond extract

Method:

Combine the sugar and water in a large saucepan over medium heat. Stir continuously until the sugar dissolves and the mixture reaches a caramel-like consistency.

Add the grated coconut to the caramel mixture and continue stirring. Reduce the heat to low and cook for about 10-15 minutes, stirring constantly.

Take the mixture from the heat and stir in the vanilla and almond extracts. If you would like then to be pink in colour (traditional) add a few drops of red food colouring until the mixture is pink.

Whilst the mixture is still warm, scoop spoonfuls onto a greased baking tray or a sheet of greaseproof (waxed) paper.

Allow the sugar cakes to cool and harden completely before serving or storing.
