Shtitha Batata (Potato Stew) is a traditional Algerian recipe for a vegetarain stew of potatoes and garlic in a cumin and paprika sauce. The full recipe is presented here and I hope you enjoy this classic Algerian version of: Potato Stew (Shtitha Batata).
Heat the oil in a pan, add the garlic and fry for 2 minutes before adding 60ml water. Bring to a simmer and cook for 1 minute before stirring-in the salt, spices and tomato purée.
Add 420ml more water and bring the mixture to a boil before adding the potatoes. Reduce to a simmer, cover, and cook for about 30 minutes, or until the potatoes are tender. Serve hot as an accompaniment.
