Shikanji (Indian Lemonade)

Shikanj (also known as Nimbu Pani) is Indian lemonade and is flavoured with black salt and spices. Of all my lemonade recipes, this is probably my favourite and is the one best suited to a hot and humid Durban summer.
It’s also one of my favourites as lemon and lime juice can be used interchangeably (or even in combination). The use of amchur (green mango powder) yields an extra tartness to this lemonade that makes it especially refreshing.
Ingredients:
125ml (1/2 cup) freshly-squeezed lemon and/or lime juice (I like a combination of both)
5 tbsp golden caster sugar
1l (4 cups) water
¾ tsp black salt
½ tsp ground cumin seeds
¼ tsp sea salt
¼ tsp amchur powder (dried mango powder)
1/8 tsp ground black pepper
Mint sprigs, to garnish
Ice cubes, to serve
Method:
Combine all the ingredients (except the mint and ice) in a large pitcher or jug. Stir together with a long-handled spoon.
Serve in tall glasses over plenty of ice, add a sprig of mint to each glass and serve.
