Ingredients:
400g sugar
100g butter, softened
2 egg yolks
280g flour
2 tsp baking soda
120ml water
1/2 tsp vanilla extract
3 whole cloves
Method:
Cream together half the sugar and the butter in a bowl until light and fluffy. Add the egg yolks and stir until smooth then sift-in the flour and baking soda. Stir to combine then add just enough water so that a soft dough forms.
Turn the dough onto a lightly-floured surface and roll the dough out until about 6mm thick. Using a 5cm pastry cutter cut into rounds. Place these on a lightly-greased baking tray and prick all over with a fork to prevent the biscuits from curling. When ready transfer to an oven pre-heated to 180°C and bake for about 15 minutes, or until pale golden brown. Remove from the oven, transfer to a wire rack and allow to cool.
Meanwhile, combine the remaining sugar and the 120ml water in a pan. Heat gently until the sugar dissolves then bring to a boil and continue cooking until the syrup forms long threads when your remove the spoon from the mix (typically 10 to 15 minutes). Remove from the heat and stir-in the vanilla and cloves.
Arrange the cooled biscuits on a tray and pour the hot syrup over them. Allow to cool to room temperature before serving.
