Which pumpkin or squash is used in these fritters depends on what's in season. Around Halloween then it's the innards of the Halloween pumpkin that's used. At other times it's more typical to use butternut squash. But almost any kind of sweet squash can be employed in the recipe. In true Saint fashion, dried fruit are added to the batter.

Ingredients:

1kg pumpkin (or butternut squash), peeled and cubed
175g sugar
225g plain flour
pinch of salt
1 egg
2 tsp baking powder
1 tsp (level) freshly-grated nutmeg
1 tsp (level) mixed spice
60g dried fruit
oil for frying

Method:

Bring a pan of salted water to a boil. Add the pumpkin chunks and cook for about 25 minutes, or until tender. After this time, drain the pumpkin then mash until smooth. Whilst the pumpkin is still hot work in the sugar (this will help the sugar dissolve). Stir the mixture until the sugar has dissolved then set aside until the pumpkin has cooled.

Once the pumpkin has cooled sift over the four, baking powder and salt. Add the spices, dried fruit and egg then mix everything thoroughly to combine. Mixing until your have a smooth and quite firm batter.

Heat oil in a medium sized pan and once the oil is hot use to shallow fry tablespoons of batter until both sides are golden brown and crispy on the outside (approximately 2 minutes each side).

Remove the fritters with a slotted spoon then drain on kitchen paper and serve hot, (in fact they are best eaten straight from the pan).
