Seven Minute Frosting is a traditional American recipe for a classic cake frosting (icing) made of egg whites, sugar and corn syrup that is beaten until fluffy in a bain-marie and which should take seven minutes to make. Ingredients:
2 egg whites
300g white sugar
80ml cold water
1 1/2 tsp light corn syrup
1 tsp vanilla extract
Method:
Put egg whites, sugar, water and syrup in the top of a bain-marie (double boiler) and beat until mixed well. Place over rapidly boiling water then beat constantly with an electric mixture as the mixture cooks for 7 minutes (or until it stands in peaks when the beater is raised).
Remove from heat and add the vanilla. Beat to incorporate then use immediately.
