Senegalese Guava Juice (Jus de goyave sénégalais)
Jus de goyave sénégalais (Senegalese Guava Juice) is a traditional Senegalese recipe for a classic drink made from pulped guava flavoured with lime juice and sweetened with sugar. I was very surprised to see guavas in the market in Dakar. Guava juice is one of my favourite drinks and this recipe comes straight from a Senegalese friend.
Ingredients:
1kg guavas
juice of 1 lime
8 tbsp (heaped) sugar (or to taste)
Method:
Quarter the guavas and add to a large pan along with just enough water to cover. Bring to a boil, reduce to a simmer then cover and cook for about 30 minutes, or until the fruit is soft.
Allow the mixture to cool then pass through a sieve, pressing the fruit pulp through with the back of a spoon. Stir in the lime juice then sweeten to taste (the Senegalese like their drinks sweet so you may need to reduce the sugar for your taste). Chill in the refrigerator and serve.
