Sea rocket seed pods are edible and have a piquant taste. They make an excellent horseradish-flavoured accompaniment and can be added to salads as a garnish. They go very well with most fish dishes, particularly fried fish.

Ingredients:

100g Sea Rocket seed pods
300ml White vinegar
2 tbsp sugar
1 tsp Szechuan peppercorns (whole)

Method:

Pick the immature green seed pods from sea rocket plants. When you get home, wash the whole seed pods.

Pour the white vinegar into a pan, add the sugar and Szechuan peppercorns and bring just to a boil. Take off the heat and set aside to cool for 10 minutes.

Pour the still warm vinegar over the sea rocket pods, ensuring that the pods are covered and that there are no air bubbles. Seal, allow to cool then label and set aside for 1 week to mature before opening.

Once you've opened the jar store in the refrigerator.
