Belfast potted herring
Ingredients:
8 small fresh herrings (gutted)
salt and freshly-ground black pepper, to taste
1 large onion (VERY finely sliced)
2 bay leaves
10 peppercorns
2 cloves
150ml water
150ml malt vinegar
1/2 teaspoon sugar (white granulated)
Method:
Set oven to 160°C (325F). Butterfly and de-bone the herring then season inside and out with salt and ground pepper. Tightly roll the herring from head to tail, keeping the skin on the outside. Pack tightly in a medium-sized ovenproof dish.
Cover with the sliced onion and add the bay leaves, peppercorns and cloves.
Mix the liquid ingredients together, then the sugar and stir until dissolved. Pour this liquid over the fish.
Cover with foil then transfer to your pre-heated oven and bake for 30 to 40 minutes.
After baking, allow the herring to cool (IN the liquid), then drain and chill before serving.
