Scots Colcannon: Classic Scottish recipe for an accompaniment of creamed potatoes blended with cabbage.
Ingredients:
300g potatoes
300g cabbage
2 tbsp butter (or dripping)
salt and freshly-ground black pepper, to taste
Method:
Peel and quarter the potatoes and remove the core from the cabbage. Bring a pan of lightly-salted water to a boil, add the potatoes and cabbage and cook for about 25 minutes, or until tender. Mash the potatoes and mince the cabbage.
Melt the butter or dripping in a large frying pan then add the potatoes and cabbage. Season to taste then mix thoroughly, allow to heat through and to brown slightly then serve.
