Ingredients:
300g Scotch Bonnet chillies
6 large garlic cloves, minced
salt, to taste (about 1 tbsp)
distilled vinegar
a little olive oil
Method:
Wash the chillies well then remove the stems and transfer to a food processor along with the garlic and salt. Process to a fine purée then add about 60ml vinegar and 20ml olive oil. Blend once more then adjust the consistency by adding a little more oil and/or vinegar.
Pour the resultant mixture into a bowl then transfer to sterilized jars and cap securely with vinegar-proof lids. Allow to stand in full sun for a few days to mature before use.
