This is an excellent alternative to a traditional bread pizza base as it does not need time to rise and can be made immediately before cooking.
Ingredients:
175g self-raising flour
1/2 tsp salt
30g butter
120ml buttermilk (or milk)
Method:
Sift the flour and salt into a bowl then cube the butter, add to the flour mix and rub in with your fingertips until the mixture resembles fine breadcrumbs. Form a well in the centre of the mix and add almost all the buttermilk (or milk). Mix quickly with a knife and bring together as a soft dough (only add more liquid if the dough is too stiff).
Turn the resultant dough onto a floured work surface and knead four or five times until smooth and elastic. Roll or knead into a 25cm circle then transfer to a lightly-greased baking tray. Use your fingers to roll the edges slightly so they're higher than the base then add the topping and bake as for any other pizza (about 10 to 15 minutes at 180°C).
