Guava Sorbet

Guava sorbet is one of the classic desserts on the island of Saint Barthélemy and is made with locally-grown guavas. An almost identical sorbet is also prepared from mangos.

Ingredients:

200g sugar
200ml water
500g guava, mashed, passed through a fine-meshed sieve and pureed (about 750g unpeeled guavas)

Method:

Place a small saucepan over medium heat then add the water and stir in the sugar until dissolved. Take the syrup off the heat and set aside to cool.

Scrape the guava purée into a bowl then stir in the sugar syrup until completely combined.

Pour the resultant guava syrup into your ice cream maker and churn according to the manufacturer’s instructions.

Alternatively, pour the guava syrup into a freezer-proof dish, place in your freezer and freeze for 40 minutes. After this time, beat the mixture with a fork, breaking up any crystals that have formed. Repeat this process every 20 minutes for an hour, then let the sorbet freeze completely.

Serve immediately for the best flavour and texture. This also be stored in the freezer for a week or so. If freezing, remove from the freezer 30 minutes before serving then beat with a fork.
