Savoury Duck

Despite the name, there's no duck involved or used here. Instead, this is a Mancunian (from Manchester, UK) delicacy, a savoury meatball usually made with minced pork liver, pork heart and sometimes carrots with breadcrumbs and onion that's wrapped in caul fat or bacon before frying and serving. They were typically served with mashed potatoes, peas and onion gravy. Another way of serving was duck-a-muffin (ie served on a English muffin).
Ingredients:
900g (2 lbs) chopped pig’s liver and heart
450g (1 lb) minced fatty pork belly
1 carrot (optional)
2 fresh red chillies (a modern addition, optional)
2 medium onions chopped
1 tbsp powdered sage
1/2 tsp of thyme
1/2 tsp of oregano
Salt and freshly-ground black pepper
Pinch grated nutmeg
1 egg
100g Breadcrumbs

Pig's caul or stretched streaky bacon, for wrapping

Method:

Mince the liver, heart, pork and onions through a course plate of your mincing machine. If you are adding a carrot and/or chillies, push these through the mincer with the meat.

Add the seasonings, herbs, breadcrumbs and egg and mix thoroughly to bind ingredients together. Shape the mixture into palm sized balls.

Wrap each ball individually either with with caul fat or stretched Pack the faggots tightly together in a roasting tin, transfer to an oven pre-heated to 180°C and cook for about 50-70 minutes.

Serve with mashed potatoes, peas and onion gravy.

Alternatively, for a duck-a-muffin serve one faggot on top of a bed of fried onions on an English muffin (see the next recipe for how to make these).
