I've been writing recipes for this site for almost 10 years now, but there are still surprising gaps in what I have provided. One of these is the classic British sausage rolls. I have a recipe for
Nigerian sausage rolls, but not for the British version. So, today, I am fixing this omission by providing a recipe for a classic sausage roll... with pictures!
Ingredients:
115g
flaky pastry (ie made with 115g plain flour)
300g sausage meat
1 medium egg, beaten (for the eggwash)
Method:
Prepare the flaky pastry according to the recipe. Turn the pastry out onto a lightly-floured work surface and roll out into a rectangle about 20cm x 25cm in size. Cut in half lengthways.
Divide the sausage meat mixture in two then, using floured hands, roll the sausage meat into a sausage shape as long as the pastry.
Sit the meat in the centre of the pastry then dampen the pastry along one edge then roll over to enclose the meat, sealing the free end closed.
Cut into 4cm lengths then arrange these on a lightly-greased baking tray and brush the tops with the beaten egg. Make three slits in the top of each with kitchen shears then transfer to an oven pre-heated to 200°C and bake for about 20 minutes, or until the pastry is well puffed and golden brown.
Transfer to a wire rack to cool, but serve warm.
