In effect, this classic Gambian dish is a stir-fry of mussel meats, potatoes and onions with bell peppers in a soy sauce and tomato paste sauce with chillies and garlic.

Ingredients:

300g Mussel meat
1 Brown Onion, chopped
1 Red onion, chopped
2 Scotch Bonnet pepper, chopped
Mixed bell peppers (2 pepper equivalent)
2 tbsp Ginger and garlic paste
1 tbsp basil, chopped
1 tbsp thyme leaves
1 Maggi cube
2 tbsp soy sauce
2 tbsp tomato purée
sea salt and freshly-ground black pepper, to taste
2 tbsp balsamic vinegar
2 bay leaves
4 large potatoes, halved
4 tbsp oil

Method:

Bring a pan of lightly-salted water to a boil, add the potatoes and boil for 20 minutes, until just tender. Drain, set aside until they can be handled then cut into pieces about the same size as the mussel meats.


Heat oil in a pan, add the onions, chillies and bell peppers. Cook for about 4 minutes, until beginning to soften then add the ginger and garlic paste. Stir to combine and cook for a further 2 minutes, until the onions begin to colour at the edges. Add the cooked potatoes to the pan along with the mussel meats.

Pour over the soy sauce and balsamic vinegar then stir in the tomato purée. Crumble over the maggi cube and nestle in the bay leaves. Stir again, bring to a simmer and cook for 5 minutes.

Scatter over the fresh herbs and adjust the seasoning to taste.

Turn out onto a plate and serve with fresh bread.
