Satay is a classic Indonesian marinade for meat or prawns. There is a core of ingredients that you need, though some native versions of satay can have more than two dozen ingredients!

Ingredients:

2 tbsp chilli oil
2 tbsp ketjap manis (sweet soy sauce)
1/2 tsp lemon juice
1 garlic clove, crushed
1 tsp freshly-grated ginger
3 grated candlenuts (or 6 grated macadamia nuts)
1 tbsp tamarind juice (made from 1 tbsp tamarind pulp and 3 tbsp boiling water)
1 tbsp freshly-chopped coriander leaves
1 tsp shrimp paste (belachan) softened in 2 tsp hot water
2 birdseye chillies, chopped

Method:

Mix all the ingredients together and use to marinate the meat cubes and/or prawns. The meat should be left in the marinade for at least three hours (and preferably overnight).

Thread the meat onto skewers and cook over charcoal for an authentic taste. Serve with a sauce made from soy sauce mixed with chopped chillies, red onions and lemon juice and, of course, peanut sauce.
