Sarikayo Telor (Steamed Egg and Coconut Milk Pudding)
Sarikayo Telor (Steamed Egg and Coconut Milk Pudding) is a traditional Indonesian recipe for a classic dessert of a sugar, coconut milk and egg custard steamed over hot water until firm. Ingredients:
400g brown sugar
2 tbsp granulated sugar
120ml water
8 large eggs, beaten lightly
1/4 tsp sea salt
1/4 tsp vanilla extract
1l coconut milk (canned will work, but fresh is better)
Method:
Combine the brown sugar, granulated sugar and water in a pan and cook over low heat for 3 minutes, or until the sugars have dissolved to form a syrup. Take off the heat and allow to cool.
Now whisk in the eggs, salt, vanilla extract and coconut milk. Pour this mixture into a 2l heat-proof bowl and steam over hot water for 15 minutes, or until the custard has set and the pudding has firmed.
