Crostata (Sammarinese Marmalade Tart) is a traditional Sammarinese (from San Marino) recipe for a classic tart of orange marmalade cooked on a rich pastry base that's covered in a pastry lattice. Ingredients:
300g plain flour
125g sugar
100g butter, melted and cooled
50g extra-virgin olive oil
3 egg yolks
freshly-grated zest of 1 orange
orange marmalade
1 egg yolk, whisked with 1 tbsp water, to glaze
Method:
Begin with the pastry. Combine the flour, sugar, egg yolks, melted butter, oil and orange zest in a bowl. Beat until you have a soft dough then cut into two pieces (one should be slightly larger than the other).
Roll out the larger piece on a floured work surface and use to cover the base and sides of your pie dish. Cover the base evenly with the orange marmalade. Now roll out the remaining pastry and cut into strips a few centimetres wide (these should be long enough to stretch across the top of the pie). Use the strips to create an interwoven lattice across the top of the pie.
Whisk together the egg yolk and water and use to glaze the top of the pie then place in an oven pre-heated to 180°C and bake for about 30 minutes, or until the pastry is cooked and lightly golden and the filling is bubbling.
