Sambai-Zu (Rice Vinegar and Soy Dipping Sauce)

Sambai-Zu (Rice Vinegar and Soy Dipping Sauce) is a traditional Japanese recipe for a classic dipping sauce of rice vinegar, dashi, sugar and soy sauce boiled together to reduce in a pan. Ingredients:

2 1/2 tbsp rice vinegar
2 1/2 tbsp niban dashi
4 tsp sugar
2 tsp Japanese all-purpose soy sauce
1/8 tsp salt

Method:

Combine the rice vinegar, niban dashi, sugar, say sauce and salt in a 1l non-reactive pan. Bring the mixture to a boil, stirring constantly, over high heat.

Immediately take the pan off the heat and set aside to cool to room temperature. Serve the sauce in individual ramekins.
