This is a traditional Chinese way of preparing both wild Mustard Greens and Shepherd's purse ready for cooking.

Method:

Wash the mustard greens and spin them dry or pat dry with paper towels. Place in a glass or earthenware container and sprinkle liberally with salt. Allow to stand over night to extract the juices. These will keep for up to a week in the fridge (do not remove the salt or juices).

They're excellent for use in stir-fries, dumplings or as part of wonton fillings.
