Salt Cod and Potatoes

This is a traditional breakfast dish from Bermuda.
Ingredients:
6 bananas, sliced
2 avocados, pitted and sliced
1.8kg butter
3 hard-boiled eggs, chopped
6 large potatoes
2 tsp
mustard powder
900g boneless white salt
cod — (for preparing your own, see the recipe on
how to prepare saltfish/stockfish)
black pepper, to taste
sherry, to taste
olive oil, to taste
Worcestershire sauce, to taste
Method:
Thoroughly was the salt cod under plenty of running water then place in a large bowl and cover with plenty of water. Set aside to soak over night. The following morning drain the water and replace with more fresh water.
When ready, drain the fish, add to a pan along with the potatoes then cover with water and bring to a boil. Reduce to a simmer, cover and cook until tender (about 35 minutes).
Meanwhile, melt the butter in a saucepan then add the eggs, mustard powder and sherry to taste.
When the fish is ready remove from the pan with a slotted spoon then flake into a bowl. Season with black pepper, olive oil and Worcestershire sauce then cover with the egg sauce. Serve the fish with the potatoes and accompany with slices of banana and avocado.
