Salade de Couac (Couac Salad)

Salade de Couac (Couac Salad) is a traditional French Guianan (Guyane) recipe for a salad of soaked couac (cassava semolina), cucumber, tomatoes, red bell pepper and sweetcorn in a sauce chien and seasoning pepper paste saucd. Method:

Finely dice cucumbers, tomatoes, and bell pepper into. Mix everything with the sweetcorn.

Add 2 tbsp of sauce chien and 1 tbsp of the seasoning pepper paste. Let it mature for 40 minutes then add 300g of Couac and let it absorb the juices.

Serve chilled as an accompaniment to smoked chicken or fish, but also with grilled meats.
