Ingredients:

3cm length of fresh ginger, peeled and finely julienned
2 tbsp vegetable oil (or lard or pork fat)
2 garlic cloves, chopped
4 boneless chicken thighs but into 3cm cubes
1 tbsp fish sauce (Nam Pla)
1 tsp sugar (preferably palm sugar)
2 spring onions cut at a diagonal into 5cm lengths
salt, to taste
shredded coriander, to garnish

Method:

Place the ginger pieces in a bowl, scatter a little salt over the top then leave to stand for 4 minutes. Squeeze them hard to remove as much liquid as possible (discard this liquid, but retain the ginger).

Heat the oil (or fat) in a frying pan then add the garlic and stir fry until browned before adding the ginger. Stir-fry for 1 minute longer than add the chicken. Stir fry lightly for 2 minutes then stir-in all the remaining ingredients (apart from the spring onions).

Cover the pan and cook gently over moderate heat for about 10 minutes, or until the chicken is cooked through. Now add the spring onions and stir fry briefly.

Transfer the dish to a serving bowl, garnish with the shredded coriander and serve immediately with rice.
