This is a classic blend of warm aromatic spices that is a mainstay of Punjabi cuisine.

Ingredients:

2 tbsp green cardamom seeds
2 tbsp whole cloves
1/4 nutmeg, freshly grated
1 1/2 tbsp cumin seeds
1 tbsp black peppercorns (Tellicherry pepper gives the best flavour)
3 cinnamon sticks (each about 8cm long) [an equivalent amount of cassia bark is superior, however]

Method:

How these spices are treated depends on how they are to be used. The spices can simply be combined and ground in a spice grinder or coffee grinder until you have a powder. This powder can then be added to flavour pickles and relishes or can be added to a curry near the end of cooking.

You can also separately toast all the whole spices in a dry pan until aromatic (1 to 2 minutes). Then combine and grind in a coffee grinder. This gives a very aromatic spice blend that should be added to a curry when cooking is complete.
