Rwandan Ugali is a traditional Rwandan recipe for a classic starchy staple made from a blend of white maize meal and gari (fermented and dried cassava meal). The full recipe is presented here and I hope you enjoy this classic Rwandan version of: Rwandan Ugali.

Though the standard white maize meal ugali is prepared in Rwanda I came across this version recently that combines white maize meal and gari (dried fermented maize).
Ingredients:
500g white maize meal (plus more)
250g gari
1.9l water
butter, to finish
Method:
Combine the maize meal and gari in a jug.
Add the water to a saucepan and bring to a boil. Slowly pour the maize meal and gari mixture into the boiling water to avoid forming lumps. Stir continuously and mash any lumps that do form.
Add more maize meal until the mixture becomes thicker than mashed potatoes. Cook for three to four minutes, stirring continually. Top with a pat of butter then cover and keep warm.
Serve immediately as an accompaniment to any Rwandan stew or soup (or any meal with a gravy).
