It was both the Germans and the Belgians who introduced potatoes to Rwanda. Now they form a staple part of the diet and fried potatoes topped with mayonnaise and onions are a common street food.
Ingredients:
6 potatoes, scrubbed and cut into chunks
4 tbsp mayonnaise
1 red onion, sliced into rings
salt, freshly-ground black pepper and hot chilli powder, to taste
oil for frying
Method:
Soak the potato chunks in a bowl of water for 20 minutes then drain and pat dry with kitchen paper.
Heat oil in a deep fryer, wok or deep pot to about 180°C. Add the potatoes and fry briskly for about 15 minutes, until golden brown and cooked through. Remove the potatoes with a slotted spoon and set aside to drain on kitchen paper.
Add the onions to the hot oil and fry for 2 minutes, Remove with a slotted spoon and drain on kitchen paper.
Arrange the fried potatoes in a warmed serving dish, garnish with the mayonnaise and the fried onions then season to taste with salt, black pepper and chilli powder.
