Rujak (Spicy Fruit Salad) is a traditional Indonesian recipe for a classic fruit salad of pineapple, banana, apple and cucumber in a chilli, soy sauce, brown sugar and lime juice dressing. Ingredients:
For the Fruit:
300g pineapple chunks (fresh or tinned)
2 bananas, peeled and chopped
3 green apples, peeled and chopped
1 small cucumber, peeled and sliced
For the Dressing:
1 tsp hot chilli powder
1 tbsp dark soy sauce
100g dark brown sugar
2 tbsp lime juice
Method:
Combine the fruit and cucumber in a bowl and toss to mix. Meanwhile, whisk together all the dressing ingredients in a small bowl.
Pour the dressing over the fruit, toss gently then refrigerate for at least 1 hour before serving.
