Rozha z Tsukrom (Ukrainian Rose Preserve) is a traditional Ukrainian recipe for a classic preserve made from a mix of rose petals and sugar flavoured with lemon juice and rum that's typically used to fill doughnuts. Ingredients:

260g rose petals (petals of the Rugosa rose are particularly good, otherwise use the Damascus rose)
800g sugar
juice of 1 lemon
2 tbsp rum

Method:

Pick over the rose petals, removing and debris and discoloured ones. Divide the petals in half and coarsely chop 130g in a food processor. Add 200g sugar then mix for 1 minute, scraping the sides of the processor bowl to ensure even mixing. Mix in half the lemon juice and 1 tbsp of the rum then add 200g more sugar. Mix for 1 minute, again scraping the sides of the processor bowl.

Turn the contents of the processor into a non reactive (glass or ceramic) bowl then repeat the process on the remaining ingredients. Pack the mixture into small jars (about 250ml) that have been sterilized and warmed in the oven. Before sealing tap lightly to remove any air bubbles. Seal well then store in a cool, dark, cupboard. The preserve will keep for up to 1 year.
