Royal Icing is the icing typically used for rich fruit cakes and the quantity given here is enough for a 1kg cake.
Ingredients:
4 egg whites
juice of 1/2 lemon
700g icing sugar
1/2 tsp
cream of tartar
Method:
Place the egg whites in a bowl then add he cream of tartar and beat lightly then beat in the lemon juice and icing sugar by degrees. Work the mixture thoroughly and keep beating until the icing is smooth and white.
This is best used immediately, as it hardens quickly. The mixture here is intended to be spread with a palette knife. If you want to pipe the icing add a little more lemon juice to get a slacker consistency.
