Like many wild berries, rowans make an excellent sauce for game. This recipe cheats a little by using pre-made rowan jelly as the base.
Ingredients:
2 tbsp rowan jelly
150ml port wine
150ml water
50g butter
2 tbsp flour
Method
Melt the butter in a pan and add the flour. Stir to combine and allow to cook for a few minutes before stirring-in the rowan jelly. Now add the cold water a little at a time, stirring all the wile. Add the port wine and bring to a simmer. Cook until thickened then serve.
Serve as an accompaniment to game and strongly-flavoured beef dishes.
