Roti Canai

Roti canais are soft rotis, slightly thicker than their more common equivalents. They are made throughout the Indian sub-continent and Indians have taken them with them throughout the world. This version is the recipe from the Indian population of Malaysia, where it’s a common street food snack.

Ingredients
250g (2 cups) plain all-purpose flour
1 tbsp salt
1 cup water
1 cup cooking oil

Method:

Mix the salt with the water until the salt dissolves.

Sift the flour into a mixing bowl then gradually work in the water. Bring everything together as a dough then knead until smooth (as you work it the dough will become less sticky). If the dough happens to be too wet work in a little more flour.

Oil your hands with cooking oil, then tear pieces of the dough and shape into palm-sized balls. Grease a bowl with oil, then grease each ball of dough with oil and transfer to the bowl. When all the dough is in the bowl, pour in enough oil so that they are all submerged. Set aside to rest over-night.

Oil your work surface then take one dough ball, flatten it between your palms until the size of a dinner plate. Now toss the dough like pizza dough (throwing it in the air whilst spinning). Do this a few times until the dough I paper thin.

Transfer the dough to a work surface then take one edge and fold to the middle. Repeat this with the other three sides so the dough becomes a rough square.

Grease a flat pan, large non-stick frying pan or large skillet with oil. When hot add the flatbread and cook until golden brown on both sides. Serve to accompany curries, or with a filling such as Malaysian Murtabak.
