The Rösti is a classic Swiss accompaniment made from grated potatoes shaped into patties. Rösti differ from Hash Browns in that the potatoes for Rösti are par-boiled before being fried.
Ingredients:
900g peeled potatoes
1 tbsp olive oil for each rösti (4tbsp total)
1/2 tsp dried oregano, crumbled
salt and freshly-ground black pepper, to taste
Method:
Cut the peeled potatoes into equal halves and par-boil in lightly-salted water for about 12 minutes. Drain the potatoes then cool under cold running water until cold.
Coarsely grate the potatoes into a mixing bowl then add the oregano and season to taste. Mix gently (do not over mix or the potatoes will not bind) then divide the mixture into 4 equal portions and form into round cake or patty shapes.
Heat the oil in a cast iron skillet then add the potato cakes, pressing them down with the back of a spoon or a wooden spatula. After about 2 minutes carefully turn them over and cook for a further 2 minutes, or until they are nicely golden brown.
Traditionally they are served as an accompaniment to meat-based dishes.
